NORMALLY OUR 555 EATS COME FROM FIREFIGHTERS BUT THIS WEEK WE MADE AN EXCEPTION...FOR A FEW REASONS.  THIS RECIPE COMES FROM GUY GOURMET OF MEN'S HEALTH MAGAZINE, WHO FEATURED OUR FORK AND HOSE CO. FRIES WHICH CAN BE FOUND HERE.  WE LOVE WHAT THEY DO AT GUY GOURMET BECAUSE THEY HAVE TONS OF GREAT RECIPES THAT ARE NOT ONLY DELICIOUS BUT HEALTHY AS WELL.  BUT IT DOESN'T STOP THERE!  MEN'S HEALTH HAS ALSO FEATURED 555 FITNESS IN AN ARTICLE WHICH CAN BE FOUND HERE!  SO A BIG THANKS TO MEN'S HEALTH FOR TAKING NOTICE OF WHAT WE HERE AT F&H CO. AND 555 FITNESS ARE TRYING TO ACCOMPLISH, HELPING TO REDUCE LODD'S DUE TO CARDIAC RELATED INCIDENTS. NOW ON TO THE RECIPE....

ROASTED SALSA

This recipe is great because it uses a cast iron pan which EVERY firehouse should have.  Adjust the ingredients as you like, this is more about technique than ingredient amounts. So put the store bought stuff back on the shelf and try out this super easy recipe.....the crew will love it!

Guygourmetsalsa.jpg

Toss plum tomatoes, chile peppers, chopped onions and garlic cloves in a hot cast iron pan, stirring occasionally, until slightly scorched.  Transfer to a blender, pulverize, season with salt and pepper.  Serve

THROWDOWN THURSDAY - CAULIFLOWER "CRUST" PIZZA

PIZZA.....ONE OF MY GUILTY PLEASURES.  LIVING NEAR NEW YORK CITY MAKES IT ALL TOO EASY TO GET A GREAT SLICE, ESPECIALLY IF YOU WORK IN MANHATTAN LIKE FDNY FIREFIGHTER ERIC HOWARD OF ENGINE 54 IN MIDTOWN!  BUT WHAT IF YOU WANT THE SAME PIZZA FLAVOR WITHOUT THE GUILT?  CAULIFLOWER PIZZA OF COURSE!
CAULIFLOWER IS NOT THE MOST POPULAR VEGGIE IN THE PRODUCE AISLE.  BUT FEAR NOT, THIS VEGETABLE CAN BE EASILY TRANSFORMED IN TO "RICE" OR NOW...PIZZA CRUST!  NOW LET'S THROW DOWN THIS GREAT RECIPE WITH THE HELP OF OUR FRIENDS FROM THE FIREFIGHTER THROWDOWN!

CAULIFLOWER "CRUST" PIZZA

cauliflower pizza.jpg

Pre-heat oven to 425*

2-3 cups of grated cauliflower (use cheese grater or food processor)

Microwave the cauliflower for 3 minutes (or steam)

Place cauliflower in a cheesecloth or thin dishcloth and squeeze out as much moisture as possible.  This is crucial to a crispy crust.

Mix in 1 egg and parmesan cheese, salt and pepper to taste (garlic if you would like)

Mold into a crust shape on a pizza pan or baking sheet with parchment paper

Place in oven for about 15 minutes

Remove, add your toppings and return to oven for another 10 minutes or so.

THROWDOWN THURSDAY - CHICKEN LETTUCE WRAPS

FirefighterThrowdown2016LOGO.png
TIME TO THROW DOWN ANOTHER RECIPE WITH OUR FRIENDS AT THE FIREFIGHTER THROWDOWN!  I CAME UP WITH THIS RECIPE WHEN WE WERE IN A PINCH AT THE FIREHOUSE AND NEEDED SOMETHING QUICK AND EASY.....AND HEALTHY.  SMALL FIRES THAT REQUIRE JUST A WATER CAN, OR "CAN" FOR SHORT, ARE OFTEN REFERRED TO AS "CAN JOBS" BECAUSE THEY ARE QUICK AND EASY....JUST LIKE THESE WRAPS WHICH IS WHY I CALL THEM "CAN JOB" CHICKEN LETTUCE WRAPS.

"CAN JOB" LETTUCE WRAPS

INGREDIENTS:

Serves 4
PACKAGE OF 6 BONELESS, SKINLESS CHICKEN THIGHS, chopped (you can substitute ground chicken or turkey)
1/2 YELLOW ONION, chopped
1 RED BELL PEPPER, seeded and chopped
1 GARLIC CLOVE, chopped
3 CARROTS, peeled and chopped
1/2 PACKAGE SLICED MUSHROOMS, rough chopped
3 SCALLIONS, chopped
2 HEADS OF BOSTON LETTUCE, substitute with romaine if needed
6 TBS. LOW-SODIUM SOY SAUCE
2 TBS. HONEY
2 TBS. HOISIN SAUCE
SRIRACHA TO TASTE
COCONUT OIL, substitute olive oil
PROCEDURE:

Combine soy sauce, honey, hoisin and sriracha in a large bowl.  Add the chopped chicken.

In a large skillet heat coconut oil over med-high heat

When the pan is hot add chicken, stirring frequently for 2-3 minutes

Add the vegetables and any remaining marinade, stir frequently

Cook for about 3-4 minutes or until chicken is cooked through.  It's good if the veggies still have a little crunch to them for texture.

Place chicken mixture in a leaf of lettuce and garnish with more scallion and sriracha.

I LOVE GETTING RECIPES FOR DISHES YOU TYPICALLY WOULDN'T FIND IN A FIREHOUSE.  AND THIS RECIPE FOR PHO IS EXACTLY WHAT I AM TALKING ABOUT.  PHO, PRONOUNCED "FUH", IS A VIETNAMESE NOODLE SOUP TRADITIONALLY CONSISTING OF A BROTH, NOODLES, FRESH HERBS AND MEAT.  IT IS CONSIDERED STREET FOOD BUT DON'T BE FOOLED, IT IS DELICIOUS ESPECIALLY ON A COLD DAY.  THIS RECIPE COMES FROM DANIEL COMEN OF SOUTHINGTON FD, LOCAL 2033 IN CONNECTICUT.....8,585 MILES FROM VIETNAM.

VIETNAMESE PHO

INGREDIENTS:

3 QTS. CHICKEN/TURKEY/BEEF BROTH(we use homemade turkey stock)
1 GINGER ROOT
1 STAR ANISE POD

PROCEDURE:

Simmer for an hour.

Serve hot broth over homemade dumplings or Asian noodles. Swirl in Sriracha and Hoisin sauce. Top with shredded cabbage, scallion, bean sprouts, and lime wedge.

555 EATS/THROWDOWN - WHITE CHICKEN CHILI

WHEN I STARTED FORK AND HOSE CO. , IT WAS A WAY FOR ME TO SHARE MY FIREHOUSE RECIPES.  AND THAT QUICKLY GREW INTO ME SHARING RECIPES AND MEALS FROM FIREHOUSES ALL OVER THE WORLD.  AND WHILE WE DON'T SAY NO TO SHARING ANY PARTICULAR KIND OF DISHES, YOU MAY HAVE NOTICED WE HAVE LIKE TO FEATURE AS MANY HEALTHY MEALS AS POSSIBLE.  THIS IS WHY OUR FRIENDSHIPS WITH 555 FITNESS AND THE FIREFIGHTER THROWDOWN SEEM SO NATURAL, BECAUSE WE ALL HAVE A GOAL AND THAT GOAL IS FOR A HEALTHIER FIRE SERVICE.  WE ARE ALL HUMAN AND NONE OF US ARE PERFECT BUT IF IT MEANS WE CAN HELP ONE CREW A DAY OR EVEN ONE FIREFIGHTER A DAY GET A LITTLE MORE FIT FOR THE JOB AND HIS FAMILY, THEN "WE DON' GOOD".  AND WHEN I RECENTLY RECEIVED AN EMAIL FROM CAPTAIN OF A SMALL DEPARTMENT, I KNEW WE WERE ON OUR WAY....OH, I SHOULD PROBABLY MENTION HE IS A FORK AND HOSE CO. CONTRIBUTOR, 555 FITNESS SUPPORTER AND FIREFIGHTER THROWDOWN COMPETITOR!

A little expert from the email from Captain Brandon Rollins...

Thank you so much for what you are doing for the fire service!!! As a Captain at a smaller department it is awesome to watch my crew get excited about fitness and cooking in the kitchen together. We have made it a point to try and have at least one meal per shift that we spend cooking together while also being healthy.

WHITE CHICKEN CHILI

INGREDIENTS:
2 LBS. BONELESS, SKINLESS CHICKEN BREASTS, THIGHS OR MIX
1 LARGE YELLOW ONION, diced
2 CELERY STALKS, diced
1 ANAHEIM grilled, skinned and diced
1 POBLANO PEPPER grilled, skinned, and diced
2 CLOVES GARLIC, minced
2 TSP. CUMIN
1 1/2 to 2 TSP. KOSHER SALT
1/2 TSP. CORIANDER
1/2 TSP. DRIED OREGANO
1 BAY LEAF
3 CUPS LOW SODIUM CHICKEN BROTH
1 13.5 OZ. CAN OF CANNELLINI BEAN OR NAVY BEAN, drained and rinsed
1 CUP FROZEN CORN

PROCEDURE:
Put the chicken, onions, celery, green chili peppers (hopefully someone didn't destroy these on the grill) , garlic, cumin, 1 1/2 teaspoons of salt, coriander, oregano, and bay leaf in a 6-quart (or larger) slow cooker. Get everything nice and mixed up and then rest the chicken on top of your vegetables. Pour the chicken stock over top, covering the chicken and vegetables by an inch or so.

Cook for 4 hours on high or 6 hours on low.

About 30 minutes before the end of cooking, remove the lid of the slow cooker and add the beans and corn. Do a taste test here, add anything you might think is missing.
Lift the chicken from the slow cooker and shred it into large, bite-sized pieces with two forks. Stir the chicken back into the chili

One of our firefighters got creative and decided to make a piping bag out of a ziplock baggy, they piped sour cream on top and then we finalized the dish with a bit of fresh cilantro.

Let firefighter Mark Bendel give us the scoop on these peppers....pun intended

"They have been a favorite at GFD, because they can be adapted in a few different directions, and because they are tasty!

Growing up, my mother made stuffed peppers stuffed only with meat. I was like eating a brick inside of a pepper! (sorry Mom) Anyhow, when I got to the firehouse, one guy made them with rice and meat, and they were ok. I was watching food network one day and saw this recipe prepared and decided to try it.

http://www.foodnetwork.com/recipes/giada-de-laurentiis/orzo-stuffed-peppers-recipe.html

It all took off from there. We had guys at GFD who wanted meat, so we added some ground beef, some wanted sauce, so we added sauce. Some wanted sausage, so one time we added sausage. We even made a southwest one where we used taco seasoning instead of salt and pepper, shredded cheese, and salsa. I always cheat and use Hunts Fire Roasted garlic Flavored tomatoes. Last night, we substituted acorn squash since zucchini is out of season, it worked well. We also did turkey meat, since one guy only eats poultry and not red meat.

The base is always peppers, tomatoes, orzo cooked in broth, and garlic. From there, you can put any spin you want on it. sticking close to the original recipe, the mint adds AMAZING flavor and an awesome aroma.

Hope all is well! Stay Safe out there! " - Mark

TURKEY ORZO STUFFED PEPPERS

Mark Bendel - Greenville Fire Department, NY

INGREDIENTS:
1 28OZ. CAN OF TOMATOES
2 ZUCCHINI, grated
1/2 CUP FRESH MINT, chopped
1/2 CUP GRATED PECORINO ROMANO, plus more for sprinkling
1/4 CUP EXTRA VIRGIN OLIVE OIL
3 CLOVES GARLIC, minced
1 TSP. SALT
1 TSP. FRESH GROUND PEPPER
4 CUPS CHICKEN BROTH
1 1/2 CUPS ORZO (rice-shaped pasta)
6 SWEET BELL PEPPERS (red or yellow)

PROCEDURE:
Preheat the oven to 400 degrees F.

Pour the tomatoes into a large bowl and break apart using a pair of kitchen shears or your finger tips. Add the zucchini, mint, cheese, olive oil, garlic, salt, and pepper. Stir to combine.

Meanwhile, bring the chicken broth to a boil in a medium saucepan over high heat. Add the orzo and cook for 4 minutes. The orzo should be only partially cooked. Use a fine mesh sieve to transfer the orzo to the large bowl with the other vegetables. Stir the orzo into the vegetable mix to combine. Transfer the warm chicken broth to a 3-quart baking dish.

Slice the tops off the peppers and remove all ribs and seeds. Cut a very thin slice from the base to help the peppers stand up.

Place the peppers in the baking dish with the warm chicken broth. Spoon the orzo mixture into the peppers. Cover the dish with foil and bake for 45 minutes. Remove the foil, sprinkle the top of each pepper with cheese and continue baking until the cheese is golden, about 15 minutes. Remove from the oven, carefully transfer the orzo stuffed pepper to a serving plate.

FIT FOR DUTY TIPS - STAYING FIREFIGHTER FIT WITHOUT GIVING UP BEER

WE HAVE TEAMED UP WITH DR. KARLIE MOORE OF FIT FOR DUTY CONSULTING TO PROVIDE WEEKLY NUTRITIONAL TIPS THAT ARE SURE TO HELP US GET "FIT FOR DUTY" .  DR. KARLIE'S WELLNESS PROGRAM PROVIDES CLASSES NOT ONLY ON NUTRITION BUT EXERCISE, WEIGHT LOSS AND HEART/BACK HEALTH.  THESE CLASSES ARE FIREFIGHTER SPECIFIC AND BASED ON SCIENTIFIC STUDIES ON FIREFIGHTERS.  TO LEARN MORE ABOUT DR. KARLIE, WHO HAPPENS TO BE MARRIED TO A FIREFIGHTER, AND FIT FOR DUTY CONSULTING CLICK HERE ! AND IF YOU OR YOUR DEPARTMENT SIGNS UP FOR THE WELLNESS PROGRAM, PLEASE LET THEM KNOW THAT FORK AND HOSE CO. REFERRED YOU! NOW ONTO THIS WEEK'S TIP.....

By Dr. Karlie Moore

It’s football season so this week I’m giving you my tip for staying firefighter fit without giving up beer:)

First of all, you don’t have to be an extreme health nut to be a healthy person. You can enjoy beer, burgers and lots of other non “health” foods and still live a long, healthy life. Everything in moderation.

Also, there are definitely some health benefits to moderate beer drinking! Including stress reduction, and improved risk factors for heart disease. However, this is only true for people who have a healthy weight. (Of course, drinking in excess causes other health problems, and studies typically equate “moderate” drinking to an average of one drink per day. ) But beer can have a lot of calories in it, so it can be difficult to maintain a healthy weight while maintaining your drinking habit. To help out with that, here is the run-down on the lowest and highest calorie beers out there.

All the lowest calorie beers ranging from 95-124 calories typically say “light” in the title. Rolling Rock (120) and Michelob Ultra (95) are also low in calories. The next lightest is Guinness Draught with 126 calories (not Guinness Extra Stout which is 153 calories).

Budweiser (145), Coors (149) and Corona (148) are next highest and comparable in calories. Sam Adams and Fat Tire both come in at 160. Red beers typically aren’t the lowest in calories, but they’re not the highest either. George Killian’s Irish Red has 162 calories and Gennesse Red has 148.

Wheat beers like Michelob Honey Wheat (175) and Blue Moon (180) may set you back a few more calories. You may have thought that the dark beers are always the highest in calories. While that may be a good general rule to follow, some don’t fit that bill. Henry Weinhard Classic Dark Lager has 166 calories and Yuengling Porter has 150 calories which is even comparable to a Coors.

It’s good practice to check the calorie count on the nutrition facts label, especially for darker beers since they can vary. Budweiser American Ale is pretty high in calories at 182 and a Miller Classic Chocolate Lager is 195 calories. Watch out: a few examples of beers super high in calories are Sierra Nevada Bigfoot (330), McEwan’s Scotch Ale (295) and Sierra Nevada Stout (225). These are pretty comparable to eating an ice cream sundae.

YUCATAN SHRIMP

Scottogatorm  -  South Daytona Fire and Rescue

Ingredients:
1 lb Shrimp
Cilantro chopped finely
2 Cloves of garlic minced
1 Tsp. sea salt
1 Tsp. pepper
1 Lime
Small jalapeno minced
1 Stick butter
1 Tbsp. Sriracha
2 Tbsp. Thai chili sauce

Procedure:
Sauce: melt 1 stick butter on low heat with garlic, siracha, chili sauce, salt and pepper, jalapeno, juice of 1 large lime. Let the sauce cook on low heat for about 10 minutes to combine flavors.

Shrimp: bring a pot of water with salt to a rolling boil. Put shrimp in unpeeled for about 2-3 minutes, or until pink. Drain the water. Toss the shrimp in the sauce. Before serving, top with a small amount of uncooked cilantro for presentation and added flavor. Serve the shrimp in the sauce as it becomes a dip while you peel and eat shrimp!

Not gonna lie, this is my new favorite way to make shrimp. Was very easy and the flavor is crazy good!

THIS RECIPE FROM JAKE POWELL OF THE SCIOTO TWP. FD IN OHIO IS PERFECT FOR A SNACK, SIDE OR SOME GAME DAY EATS AT THE FIREHOUSE OR HOME.

"SPEAK NO EVIL, HEAR NO EVIL, SEE NO EVIL" ASPARAGUS

There are no ingredient amounts as this makes for a great side or snack so use your judgement on how much you will need....

Bake turkey bacon at 375* until just cooked so that they stay flat.  This will help in rolling everything together.

Meanwhile, preferably grill (or bake) asparagus until tender.

When bacon and asparagus are done, lay out 3 strips of bacon and smear lightly with green onion cream cheese.  Place a few asparagus on one end of the bacon and roll up, serve.

DONT GET STUCK IN THIS COMMON CALORIE TRAP

By Dr. Karlie Moore

Last time I talked about calories in beer and I told you that some beers can have near 300 calories in them, about as much as a Dairy Queen sundae. If you missed that one, you can read it here. Staying firefighter fit requires maintaining a healthy weight so it’s key to understand which foods can have you unknowingly taking in tons of calories.

A great resource on this topic is a book called “Eat This, Not That.” It includes examples from popular restaurants and fast food chains as well as grocery store items such as cereals and breads.

One food that we tend to trip up on (probably because it is commonly marketed as a “health food”) is the smoothie. Some smoothies can have up to 600 calories in them. That’s more than the McDonalds McRib sandwich! Luckily smoothie places like Jamba Juice post their calories on the menu (or in a pamphlet).

Be wary of ingredients that add calories like ice cream/sherbert and peanut butter. And even while all-fruit smoothies with no added sugar can be an excellent way to get in your fruit servings for the day, remember that those calories still count! The healthy, all-fruit smoothies still pack in between 250 and 300 calories. So the best way to eat a smoothie would be as a meal replacement (for breakfast) or in addition to something small (for lunch), rather than simply eating one between normal sized meals.
